Beef Stew

The traditional Norwegian dish “Lapskaus” is always a winner at the dinner table, and with beef it is even better.

Ingredients

  • 1kg beef, rib roast or similar

  • 1 brown onion

  • 1-2tbsp white flour, if desired

  • 3 carrots

  • 2 medium sized parsnip

  • 1/4 celeriac

  • 1 small leek

  • 800g potatoes

  • 1L beef stock

  • salt

  • ground black pepper

  • butter for frying

  • chopped parsley for decoration

  • flat bread or freshly baked bread with butter for serving

Directions

  1. Chop the meat into cubes. Brown the meat well in butter in a generous saucepan, preferably in several batches. Season with salt and pepper. Add coarsely chopped onion while browning and finally sprinkle with flour, if desired.

  2. Pour over the stock, bring to a boil and let simmer for an hour until the meat starts to tender.

  3. Wash all vegetables and cut them into even pieces.

  4. Add the vegetables and let it simmer over medium heat until everything is completely tender. Stir occasionally, making sure the stew doesn’t stick to the bottom. Season with salt and ground pepper.

  5. Sprinkle with chopped parsley before serving.
